11 Breakfasts You Can Make in 15 Minutes

Mornings in our home are… a rush! Between waking up and negotiating with myself about whether coffee counts as breakfast, I’ve learned one thing: quick morning meals are a survival skill. And no, coffee does NOT count as breakfast.

Today I’m sharing our favorite breakfasts you can make in 15 minutes. These are the ones you can throw together right before heading out the door, or prep the night before so you wake up already a step ahead. A few even let you mix the batter the night before and simply pop them in the oven while you get ready.

So if breakfast always feels like a race in your house too, this list is for you!

These naturally gluten-free buttermilk pancakes are my go-to when I need breakfast fast. Made with rice flour and homemade buttermilk, they come together in just 10 minutes: 5 to mix, 5 to flip, and you’re done! Light, fluffy, and perfect for busy mornings.

This tiramisu chia pudding is the creamiest, most dessert-like breakfast we make, full of flavor and perfect for overnight prep. I mix a batch the night before (or make extra for a few days), and mornings instantly feel easier. It’s like having tiramisu for breakfast… but healthier.

11) No-Bake Pumpkin Cookies

These no-bake pumpkin cookies are one of Rita’s fastest recipes. Just 15 minutes and you’ve got the most delicious “not-really-cookies” breakfast. They’re made with oats, peanut butter, and real pumpkin purée, so they actually give you a nice morning boost. We make them the night before and let them chill in the fridge, and they’re perfect to grab on the go.

And yes… I know a couple of these aren’t literally 15 minutes start to finish! Some need a quick bake, some sit in the fridge overnight… but that’s exactly the point. The actual morning work is 15 minutes or less. A whisk here, a flip there, maybe popping something in the oven while you get dressed, that’s the kind of breakfast routine that keeps us sane!
