This is my surprise recipe that I usually make when I have guests over! These delicious rolls are a real surprise that almost no one has tried, and everyone here loves them. Even Jorge, who isn’t a fan of fruit snacks, loves this recipe.

I’ll teach you how to make this recipe quickly and easily, so you can enjoy this delicious snack (or dessert) whenever you want!

I admit that 3-ingredient recipes are almost never great, but the problem is never the quantity of ingredients, but rather the quality. Believe me, if you choose the right ingredients, you can make a fabulous recipe with very little. Here, as you’ll see, we’ve only added one extra ingredient: honey, but even that’s optional.

  • 1 ¼ cup self-rising flour (200g) – I choose this flour because it’s more practical, as it already contains baking powder and salt. I’ve made this recipe with all-purpose flour before, as it was the only one I had, but I had to add 2 teaspoons of baking powder to keep the batter from becoming too dense.
  • ⅔ cup Greek yogurt (150g) – It will add consistency and moisture to our dough. I don’t recommend using regular yogurt, as the dough will be too sticky and you won’t be able to do anything with it.
  • 1 medium apple finely diced (about 1 cup / 120 g) – Don’t just choose any apple! For these apple rolls to turn out perfectly, you need to choose an apple that isn’t too juicy, like Fuji or Gala. I made the mistake of making this recipe with Granny Smith apples, and the apple released too much juice into the batter. It was a disaster!
  • 3 tsp honey (optional) – Honey is optional, but I recommend using it to brush on before baking. Besides making the Apple Rolls look amazing, it will give them a very mild sweet flavor.

How to Make 3-Ingredient Apple Rolls

First of all, let’s preheat our oven to 350ºF (180ºC) and line a baking sheet with parchment paper. I remind you once again that preheating the oven doesn’t just save time, we do it so that the Rolls bake evenly.

Now let’s start with the star ingredient of our recipe: the apple!

Take an apple and cut it into small cubes, as you can see in the image below. If you notice that the apple is very juicy, take a paper towel and pat it dry. This will prevent the apple from releasing too much juice into the dough.

Leave the apple aside for a few seconds, then we’ll pick it up again, because now it’s time to prepare the dough.

It’s quite simple: in a bowl, mix the self-rising flour and Greek yogurt until a soft dough forms. If the dough is too sticky, add a little flour; a tablespoon at a time is more than enough. Adding too much flour will make the dough dry and crumbly, so don’t overdo it.

This trick is similar to how I handle dough in my 3-Ingredient Bread without yeast, where the texture makes all the difference!

Once you have a malleable dough, add the apple pieces that we prepared previously and wrap them well in the dough. You need to make sure you mix the dough well, otherwise you will have Apple Rolls with lots of apple and others without apple.

Now it’s easy! Lightly flour your hands and scoop walnut-size pieces of dough and roll into smooth balls. Now you just need to place the balls on the lined sheet, leaving a little space between them, like in the image below.

Bake the rolls until golden and lightly browned.

To finish, if desired, lightly brush the tops with honey for a more golden color and sweeter flavor. Be careful here, because if you add too much honey, it will quickly burn the tops of the Apple Rolls. A light brush is sufficient.

Now we just need to bake for 20–25 minutes, until risen and lightly golden, and that’s it! You can let it cool for 5 minutes or you can eat it while it’s still warm, which is how Jorge likes it best!

Don’t make the same mistakes I did!

It’s not worth wasting your time and making the same mistakes I did, don’t you think? So I decided to be honest with you and share the mistakes I made the first few times I made this recipe. Now my Apple Rolls almost always turn out well, but only because I’m careful not to make those mistakes.

  • Using regular yogurt – Greek yogurt is used in recipes for a reason: it has less water and more protein, and this helps the dough hold together better without sticking to your hands. When I tried regular yogurt, I could barely move the dough; it always stuck to my hands.
  • I used too much honey – If you spread too much honey on top of the rolls, it will cause the tops of your rolls to burn in just a few minutes in the oven. You have to give it a few light dabs of honey, just to add a thin layer of honey. Trust me, it’s more than enough!
  • I made the rolls too big – You should always lightly flour your hands and scoop out walnut-sized pieces of dough and roll them into smooth balls. If you make the balls too big, they won’t bake in the center. So don’t overdo the size of your rolls.
  • Does the apple look too moist? Be careful! – That was one of my first mistakes! The apple actually looked very juicy, and I didn’t dry it out. The apple, when cooking, released a lot of moisture into the Rolls, making them soggy. Moral of the story, always dry the apple with paper before wrapping it in the dough.

Now that you know all the mistakes I made, I’m sure you’ll get the recipe right the first time!

I’m sure you’ll love these variations

You know that feeling you get when you make a recipe over and over again and feel like you’re always doing the same thing? That happened to me. I made this recipe so many times that I had to give it a twist! I tried a few variations that made these Apple Rolls truly unique and delicious!

  • Cinnamon Apple Rolls – If you love cinnamon as much as Jorge, who even eats it with a spoon if necessary, you’ll love this variation. Just add 1 tsp of ground cinnamon to the flour for a cozy fall flavor. I usually add cinnamon to the recipe when I make this for Thanksgiving because it pairs perfectly!
  • Sugar-Dusted Rolls – This is a super simple variation, but it changes the flavor of the rolls for the better. Instead of drizzling honey on top of the dough before baking, sprinkle some cinnamon sugar on top. It will taste super delicious, it will taste like Christmas!
  • Berry Rolls – Instead of using diced apples in the rolls, you can use other fruits. One that worked for me was blueberries. It’s important to freeze the blueberries before using them in the recipe, otherwise they’ll fall apart and make the dough too wet.
