Back-to-school mornings have a special talent for turning 30 perfectly reasonable minutes into about seven. Someone can’t find a shoe, someone forgot they needed a signed paper, and suddenly breakfast has to happen while everyone is practically halfway out the door.

That’s exactly why I love breakfasts that are quick, make-ahead friendly, freezer-friendly, or simply tempting enough that kids won’t stare at them for ten minutes before taking a bite.

These are 21 of my favorite easy back-to-school breakfast ideas, from pancakes and muffins to breakfast sandwiches, oatmeal cups, and even a breakfast cookie or two. Because sometimes putting the word “cookie” in breakfast is simply good parenting strategy.

Keep a few muffins, bars, or sandwiches ready to grab, save pancakes and French toast for mornings with a little more breathing room, and suddenly breakfast becomes one less thing to think about.

And during the first couple of weeks back at school, that alone feels like a small miracle.
