My chocolate-covered apple slices are sweet, chocolatey, and perfectly crunchy! They're the easiest fall treat you'll ever make. The hardest part? Trying to eat just one or two, haha.
These have become a go-to for Rita and me whenever we want something cozy and quick. They taste like a cross between a caramel apple and candy bark. I make them all the time for parties once the weather cools down, and they always disappear fast!
They’re apple-solutely irresistible (see what I did there?). You’ll know exactly what I mean after the first bite!

Growing up, chocolate-covered apples were such a treat for me. So, on a random chilly fall afternoon, I was craving something sweet but simple and these just crossed my mind. And, to be honest, I'm all about recreating any kind of recipe, especially childhood ones.
I first started making these with my mom every fall, the smell of melted chocolate and apples, always takes me right back to her kitchen.
When I told Rita I was going to make these, she was shocked! She had never tried one before (can you believe it?!). She used to say that fruit in a sweet dessert didn’t make sense to her. Well… let me tell you, she’s been officially converted!
Now she’s the one asking me to make them every time the weather cools down. She even uses fruit in her own recipes, like her 3-Ingredient Apple Yogurt Rolls, which is another cozy favorite in our house. So, if Rita likes these, I can 100% assure you’re going to love them too.
What You'll Need
Using 2 medium apples, I make about 8 to 10 caramel apple slices, depending on how thick I cut them and the size of the apples. I usually make these when we're having a party or need to bring something to a potluck during the colder months. If I make this just for Rita and me, I usually only make one apple.
Ingredients for Caramel Apple Slice
2 medium apples - I like to use crisp, firm varieties such as Honeycrisp or Granny Smith. They hold up better when dipped and give a perfect crunch.
8-10 lollipop sticks or popsicle sticks - I use food-safe lollipop sticks but you can also use wooden ones. Popsicle sticks are sturdier for thicker slices, while lollipop sticks look cleaner for photos.
6 oz dark chocolate (about 1 cup, chopped or chips) - My absolute favorite for this recipe is Callebaut Dark Chocolate 811 Callets. It’s definitely a splurge, but I promise you it’s worth it. Most of the time, though, I use Aldi Dark Chocolate 70% Cocoa Chocolate Bar, way cheaper and still tastes (almost as) good.
¼ cup caramel sauce (store-bought or homemade) - I like to use a thick, buttery caramel, it makes a huge difference. I like Trader Joe’s Fleur de Sel Caramel Sauce, it has the perfect consistency once warmed.
Toppings of your choice - I usually go with sprinkles, mini marshmallows, and a second chocolate drizzle, but whatever you have on hand works! Crushed nuts, shredded coconut, even candy bits, it’s all about texture and color.
Gather all the ingredients because I'm going to teach you how to make my delicious caramel apple slices. That quick contrast, the cool, crisp apple against the warm chocolate is what makes these special. It’s the simplest combo, but it always works!
How to Make My Caramel Apple Slices
I like to start by lining a baking sheet with parchment paper, this keeps the apples from sticking later and is much easier to clean up!
I peel the apples and slice them into thick rounds, about the width of my index finger (at this point, you know my fingers are my ruler, haha). Also remove the seeds as best as you can since they don't taste good.
Next, I gently press the lollipop stick into each slice and pat them completely dry with paper towels. Any moisture left behind will make the chocolate slide right off! Also, don’t hold the apple too tightly or you'll crush it. Been there, done that…

Now, time to melt the chocolate! I like to do it in a heat-safe bowl over simmering water, stirring until smooth and glossy. You can also do 30-second intervals in the microwave, stirring in between until fully melted.
Once melted, I dip each apple slice into the melted chocolate, it's faster, easier, and gives me an even coating. But you can also use a spoon to pour the chocolate over the top, it just won't be as smooth.
Then, I set them on the parchment paper to harden. When in a hurry, I pop them in the fridge for 10 minutes, but I feel like the texture isn't as good as setting at room temperature, and it also looks duller.
The setting time will depend on the temperature inside your house! When it's warmer in my kitchen, it takes almost 40 minutes, but when it's colder, it's usually ready in 20 minutes. I like to touch one lightly to check, if it smudges, they aren’t ready.
Dip each apple slice into melted dark chocolate.
When the chocolate is firm, it's finally time for the best part… the caramel drizzle! I warm the caramel just enough to make it pourable, you can either use the double boiler method again for a few minutes or microwave it in 10-second intervals, stirring in between.
You don't want it hot, just warm and smooth enough to drizzle easily, otherwise the chocolate will melt!
Then, using a spoon I zigzag it over each slice. This is going to be a little messy, but that rustic look is part of the charm.
Drizzle with caramel and let set.
Now comes the fun part, while the caramel is still warm, I like to add the toppings right away. Otherwise, they don't stick and fall when you pick them up, that happened to me the first time I made these, haha!
This is the time to get creative! I like to add mini marshmallows, colorful sprinkles, a second drizzle of chocolate, crushed nuts… Whatever you choose, they'll taste delicious either way.

Wait a few minutes for the caramel to set and the slices are ready to serve. They're chocolatey, crunchy, and perfectly sweet. This recipe couldn’t be any simpler. And it’s one of those fun, hands-on treats I love making on cozy afternoons!
Now, the only bad part about this recipe is that it doesn’t store well. I've stored them in the fridge for up to 24 hours in a single layer. Longer than that and the apples started to soften, lose that fresh crunch, and don’t taste as good. So, I always make them the day I'm actually serving them or, at best, the night before.
And don’t freeze these! Trust me. I tried it once, and the apple slices released so much moisture when thawing that they turned into a soft, watery mess.
Variations I’ve Tried And Loved
I've made these caramel apple slices quite a few times, so I’ve switched things up a few times just for fun. Still, the recipe I shared is Rita’s and my favorite way of making them.
But since that's kind of personal taste, here are a few of my favorite twists that also turned out almost as good:
Caramel dip - Now, if you're a true caramel lover, like my brother, I usually skip the chocolate and just dip the apple slices straight into warm caramel! It’s more like the classic fair-style version. This one is a bit too sweet for us, so I just make one or two just for him!
White chocolate drizzle - I've swapped the dark chocolate for white chocolate quite a few times, it gives a nice color contrast and pairs perfectly with the caramel drizzle. This one is my mom's favorite, she loves white chocolate.
Salted caramel twist - While the caramel is still warm, sprinkle a pinch of flaky sea salt over it. Trust me, if you love anything salted caramel, you're going to love this one. It's one of my favorite variations, it really makes the flavors pop!
Cinnamon crunch -My cousin Claudia loves anything with cinnamon, so I thought, why not surprise her with this variation? Since this recipe is naturally gluten-free, I don't need to make a special batch for her. I either stir a tiny bit of cinnamon into the melted chocolate or I lightly dust it over the caramel. I still double-check that everything I’m using is gluten-free, as some ingredients can contain additives or flavorings made with wheat.
Whichever version you make, I guarantee they’ll disappear just as fast. When I have extra time while making these, I like to make a few variations on the same tray. This way everyone gets to eat their favorite combo, and the tray ends up looking absolutely gorgeous and full of color.

Mistakes To Avoid When Making My Caramel Apple Slices
When making a recipe so many times, no matter how simple it is, you’re bound to run into a few problems. That's just how it goes and that's fine. We learn and we move on!
Luckily, they’re all easy to fix. Here are a few things I’ve learned that’ll save you time (and keep your apples looking picture-perfect!):
Cutting the apples too thin - Thin apple slices tend to break when you add the sticks. Also, a thicker slice gives you a better crisp bite. The width of my index finger is usually just right, sturdy enough to hold but still easy to eat. At first I also sliced them too thin, so I added some chocolate in the middle to stack them together and dipped them as one!
Pressing too hard - Be careful holding the apple when inserting the stick, or you’ll crush it. Gentle pressure is all you need, just twist the stick slightly as you push it in.
Not fully drying the apple slices - Any moisture left behind will make the chocolate slide right off. Pat each slice completely dry with paper towels before dipping!
Rushing the setting time - If you're short on time, it's best to just pop the tray in the fridge for 10 minutes instead of trying to add the caramel drizzle while the chocolate hasn’t yet fully set. Just leave them out for two or three minutes and let the chocolate “relax” before moving on, to prevent condensation.
Overheating the caramel - One of the first times I made this recipe, I accidentally overheated the caramel, and it melted the chocolate underneath. If you accidentally melt a few, just pop the tray in the fridge for 5 minutes to reset the chocolate before finishing.
The first few times I made them, I came across these mistakes. Now that I've gotten the hang of them, they're a breeze to make. I know exactly how the chocolate should look, how warm the caramel should be, and how long to wait before sneaking the first bite (shh… don't let anybody know).
