I think every person has that moment around 6pm when they stare at a pack of chicken and genuinely hope inspiration will appear on its own.
The thing is, most of the time, the problem isn’t really cooking. It’s deciding what to make when you’re tired, hungry, and already mentally done with the day.

Chicken Marinade
Olive oil, soy sauce, garlic, lemon, paprika, whatever bowl is closest. Mix it, throw the chicken in, and leave it in the fridge for a bit.
Then, when you cook it, the chicken comes out smoky, salty, garlicky, with enough lemon to keep it fresh and just enough honey to help the edges caramelize once they hit the heat.

Ingredients for My Chicken Marinade
These are mostly ingredients people already have sitting somewhere in the kitchen, which is probably part of why this marinade gets made so often around here.
½ cup extra virgin olive oil (120 ml) – Helps coat the chicken evenly and keeps it from drying out.
¼ cup soy sauce (60 ml) – Brings salt, depth, and that savory base that carries everything else.
2 tbsp lemon juice – Brightens the whole marinade and balances the richness.
1 tbsp honey – Adds slight sweetness and helps with caramelization while cooking.
3 garlic cloves, finely minced – Gives the marinade its backbone.
1 tsp smoked paprika – Adds warmth and a subtle smoky depth.
1 tsp dried oregano – Keeps it grounded and slightly earthy.
1 tsp black pepper – Brings a bit of heat without overpowering anything.
½ tsp salt – Adjust depending on the saltiness of your soy sauce.
This makes enough marinade for about 1.5–2 lbs (700 g–1 kg) of chicken, depending on the cut.
How To Make It
This might be one of the least complicated recipes on the site.
It starts with adding everything to the bowl at once. Olive oil, soy sauce, lemon juice, honey, garlic, spices. Then just whisk until the honey dissolves and the whole thing starts looking slightly thicker and darker.
Add all ingredients but the chicken to your bowl.

The chicken goes in next (or the other way around if you prefer), and the only thing that really matters is making sure every piece gets coated properly. Then into the fridge.

Half an hour works if that’s all you have, but overnight is where the marinade really settles into the chicken properly. The garlic softens, the lemon mellows out, and everything starts tasting more balanced by the time it cooks.

A Few Things That Actually Matter
This marinade is simple, but a few things make a noticeable difference.
Don’t skip the oil. It’s what helps carry the flavor evenly across the chicken.
Fresh lemon juice works much better than bottled here.
If you marinate overnight, don’t go too heavy on the lemon or the texture can start changing too much.
And always let excess marinade drip off slightly before cooking. Too much sitting directly in the pan burns faster because of the honey.
None of it feels particularly technical while you’re doing it, but it’s usually the difference between decent chicken and the kind people keep picking at straight from the tray before dinner even starts.
Where I Use It
Mostly with chicken thighs because they stay juicy almost no matter what you do to them, but honestly, this works with pretty much everything.
Grilled chicken, oven-roasted chicken, skewers, even chicken cooked quickly in a pan during the week when there’s not much time to think about dinner.
